Sancocho
What is Sancocho? It the most delicious and popular dish that characterize Las Minas gastronomy. its two most important ingredients are ñame (yam), and yuca (cassava). It will make the soup thicker since it dissolves. Beware when peeling ñame as it exudes a milky sap that is slightly slimy. People from las Minas cook Sancocho in an open fire (fogón).  That way it picks up a hint of smokiness which is the traditional way to cook in Las Minas.
